Where do we source our meat?
Our cows & bison come exclusively from American and Canadian ranches, 100% grass-fed and grass-finished. Our elk are Cervena-graded from New Zealand — also 100% grass-fed, regeneratively raised, and never confined.
Why grass-fed & finished?
Our animals never see a grain, are raised with humane, regenerative practices, and are never near pesticide overspray — supporting both nutrient density and a thriving ecosystem.
How do we make our slabs?
Made exclusively from the complete brisket and a sprinkle of microplastic-free sea salt — sliced into thin cross-sections, laid on a non-sprayed rack, salted, and dried to a rich, tender finish.
How many times is our tallow purified?
Our bison tallow is purified 5 times.
What does "regeneratively raised" mean?
A farming approach where animals put nutrients back into the soil as they graze — regenerating topsoil, improving water cycles, and supporting biodiversity, instead of depleting the land.
